Sour Cream Chicken Enchiladas

A few years ago I was asked to create artwork for the annual "High Art, High Chairs" main exhibition invited to artists among the mountains of the West - USA Rocky Mountains USA. My creation is "Urban Shaman's Chair," the point of which is - in a world surrounded by frantic routines, contemporary noise, and the rat race mentality, there is a call for a 'spiritual place' where one can acknowledge one's existence and existence. It is often difficult to incorporate a vision of nature into the daily routine while working hard to make the world go round.

Cooking for the soul is no less challenging, in fact I believe one must become a "Kitchen Doctor" to maintain the level of perfection required to create scrumptious culinary masterpieces. How to do it? As any great chef would say, experiment, experiment, experiment.

Meaning, what's the point of pursuing the culinary arts if you're just going to follow the gurus (in this case - recipes) who are there to support your journey by giving you the basics, general direction, and necessities. But, for proper chemistry, it's always good to "follow the directions" except; your altitude is different, your stove doesn't heat well, your kitchen is cold in winter or hot in summer and fresh ingredients are ready, say, Kiwis in the Arctic - then you'll have to sort and preserve them yourself.

To be a "Shaman Doctor" like anything, one needs to have the necessary ingredients for proper chemistry. A passion for adventure, a foundation in culinary survival, and a collection of journals, articles, and I dare say - Cookbooks highly recommended. But that's the basics, necessities and of course inspirational texts - after all Proust reads Emerson!

That said, this is one of my favorite experiments

Sour cream sauce
Ingredient:
1 cup sour cream
2 tablespoons of fresh local honey
1/8 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon cinnamon
1/8 cup jalapeno juice from your favorite canned jalapeno brand
2 tablespoons of fresh lime juice

Methods and Steps :
Steps 1.
Mix all ingredients well and refrigerate for an hour, then return to room temperature for full flavor.
Steps 2.
For serving and serving I used 12-oz clear.
Steps 3.
Squeeze bottles are available at your favorite restaurant supply store or Amazon.com.
Steps 4.
They make great designs with your sauces and help adjust the amount easily.
Steps 5.
After all, food is about how it looks, as much as it tastes.
