As summer approaches, refreshing summer rolls are the solution for a quick and easy meal, or even as a picnic dish.
Summer Rolls

As summer approaches, refreshing summer rolls are the solution for a quick and easy meal, or even as a picnic dish. The traditional filling is assorted fresh and refreshing vegetables topped with minced pork or beef and sprinkled with scallions.

My version of Summer Rolls uses some of Sydney's best seafood!, along with a variety of vegetables.

I love it! And can have it (almost) every day.

What do you need:
A packet of rice paper
A pack of ready-to-eat fried tofu, can be found in the cooler parts of the supermarket

Ingredients:
1/2 pack of bean sprouts
1 cucumber
Sprig of coriander
250 grams peeled prawns
Hoisin sauce
Chili sauce

The ingredients (except the paper-wrapped rice) make a dozen rolls.

What to do:
Step 1.
Boil a kettle of water, while preparing the ingredients – this is for use with the rice paper later.
Step 2
Boil water in a saucepan. Bean sprouts tail dock. Boil the sprouts in hot water. Set aside.
Step 3.
Return the pot of water to a boil. Clean the prawns and cut them in half along the spine. Boil in hot water and set aside.
Step 4.
Peel the cucumber and cut it 6-8 cm long.
Steps
Wash the cilantro and use only the leaves.
Steps 5.
Mix the Hoisin sauce and chili sauce in a small bowl. Usually I use 3-4 tablespoons of Hoisin sauce and 2 tablespoons of chili sauce, plus a tablespoon of hot water. Just to thin it out a little, so it's not too salty.

Making rolls:
Step 1.
Follow the directions on the rice wrapping paper, using a kettle of boiled water, which shouldn't be too hot by now.
Step 2.
Spread a small amount of sauce on the rice paper and start filling it with the ingredients (in the center of the paper).
Step 3.
Fold the bottom of the paper over the filling (towards the center), then fold it on each side (left and right sides inward towards the center). After that, continue rolling.

Tips:
You can be as creative as you like with the filling of your choice. I'm tired of the variations of crab meat, shredded chicken, and just a variety of vegetables. Everything is delicious!

If you think the rice paper is too moist (after softening in the water), place it briefly on a paper towel to help absorb the water.
