Tomato and Brie tart! Not something you see every day, but you have to do it! It's so delicious and just satisfies all your senses and even animates tastes you never knew existed! Comparing it to a tomato and cheese sandwich would be insulting. The cheese itself is highly addictive and is a great change to using Brie in a recipe instead of eating it plain with just crackers. Even though it already tastes good!

No, I'm not referring to a famous desperate housewife, but rather a more tantalizing, spicy, and creamy version of the cheese famous for its velvety-thin rind from its white mold. For the sake of interest, I did look up the maiden name "Brie" on Baby names and other "naming engines", but all they could tell me was that it was French.

Which makes me wonder WHY would you name your child after cheese? Brie, or Brie de Meaux as the knowledgeable French call it, did you guess it, was originally a French cheese and is known as the “King of Cheese”! Made from raw cow's milk, (dated from the Pre-Pasteurization period) and made in the form of a flat wheel with an average weight of 2.6 kilograms.

According to French Cheese, AOC Brie de Meaux cheese is protected by origin and can only come from certain areas of Île-de-France near Paris. It was noted by the French revolutionary Lavaliere in 1793, that Brie was dearly loved by both the rich and the poor, and thus advocated equality long before it was thought possible! Not many other foods can boast of promoting such worldly virtues. SO support equality and start cooking! Even vegetarian friendly!

Ingredients:
1 cup wheat flour,
pinch of salt,
90 grams diced cold butter, cup milk,
2 egg yolks,
2 cloves crushed garlic,
2 tablespoon wheat mustard,
60 grams grated cooked cheddar,
4 sliced tomatoes,
125 grams thinly sliced Brie, sea salt and pepper.

Method and Steps to Make Tomato and Brie Tart:
Steps 1.
Preheat oven to 190 degrees Celsius.
Steps 2.
To make shortcrust pastry, sift flour and a pinch of salt into a large bowl.
Steps 3.
Then using your fingertips, brush the butter into the flour until it resembles a fine breadcrumb.
Steps 4.
Add 3-4 tablespoons of cold water and mix until it becomes a dough. Cover and refrigerate for 20 minutes.
Steps 5.
Roll the dough between 2 sheets of parchment paper to a thickness of 5 mm, then line a 25 cm cake pan with cookies, trimming the edges.
Steps 6.
Cover the cake with parchment paper and peas or rice and bake for 10-12 minutes.
Steps 7.
Remove beans or rice and parchment paper and bake cake for another 5 minutes then set aside for 5 minutes.
Steps 8.
To make the filling, spread mustard evenly over the pastry base, then sprinkle with cheddar.
Steps 9.
Arrange tomatoes and brie on top.
Steps 10
In a small glass bowl, whisk together milk, egg yolks, crushed garlic, salt and pepper, then pour the egg mixture over the tomatoes or brie.
Steps 11.
Cook for 30-35 minutes until cooked and golden. Serve hot or cold.
