Deli Pasta Salad. Don't you just love the vibe of going to your local 'whatever' shop! 'It's up to' for any and any kind of local shop, big or small, that has a unique, friendly, "I'm one of the regulars. How are you today?" Feel it. There's something so rare about finding one of these types of specialty stores. They are few and far between!

I really like the current Deli! Yes Deli, comes from the word Delicatessen- which comes from German, which means 'delicious food' and usually refers to good food. I love how they serve just about every type of gourmet food imaginable! This is simply unimaginable! If you need inspiration for cooking your next meal, head to your local deli! You'll bounce off the wall thinking of all the things you could possibly cook! Two of my favorites are JONES the grocery store and Simon Johnson - both good food galore and not an unfriendly face in sight!

Deli pasta salad is a great simple recipe to prepare after an 'inspiring' visit to the Deli! It's full of flavors from capsicum, dried tomatoes, salami and basil in particular! It's also a nice change from heavier cream-based pastas, and goes great with herbal or garlic breads! So why not visit the grocery store today and be inspired! Deli Pasta Salad

Ingredients:
500 grams large radiator pasta (spiral),
large eggplant thinly sliced,
1 red capsicum thinly sliced,
150 grams dried tomatoes,
150 grams sliced salami,
1/3 cup fresh basil,
3 tablespoons oil olives,
2 tablespoons balsamic vinegar,
sea salt, extra olive oil

Instructions How and Steps to make Chunky Deli Pasta Salad:
Steps 1.
Cook pasta in a large saucepan of boiling water. Make sure to add lots of salt to the water!
Steps 2.
Drain the pasta and then rinse with cold water.
Steps 3.
Place the eggplant slices and capsicum on an oven tray lined with parchment paper.
Steps 4.
Drizzle with olive oil and sprinkle with sea salt, then bake in the oven for 45-50 minutes.
Steps 5.
You can put it under the grill for a more charred flavor.
Steps 6.
Add pasta to a large bowl.
Steps 7.
Add eggplant, capsicum, dried tomatoes, salami, and basil.
Steps 8.
Add the olive oil and balsamic vinegar and mix until smooth.
