Don't you think Camembert and Brie look a lot alike? I often wonder if they are really the 'same cheese' just marketed under a different name. Talk about conspiracy theories! According to Dairy Australia, it turns out that the two are similar because they belong to the 'White molded cheese' family.

This particular type of cheese is aged from the outside to the inside and when ripe the cheese should have a velvety white crust, and a glossy gold interior that 'flows' when cut. It 'flows' so to speak, also makes cutting the Camembert cheese a bit problematic, as the slices tend to get squashed unfortunately. If the center of your cheese is chalky, this indicates an under cooked cheese, and so you should have a tough talk with the person who sold it to you.

An interesting fact about this white molded cheese, is that it absorbs other flavors around it, like a sponge! So keep this cheese away from any pungent smelling food in the fridge!
