4 teaspoons instant espresso powder
1/2 cup boiling water
1/3 cup natural cocoa powder
1/3 cup (about 2 1/3 ounces) granulated sugar
1/3 cup (about 2 1/3 ounces) packed dark brown sugar

For the Caramel Pudding Layer:
Non-stick baking spray
1/3 cup (about 2 1/3 ounces) granulated sugar
3 tablespoons light corn syrup
2 tablespoons of water
6 tablespoons heavy cream
6 tablespoons (4 ounces) unsalted butter, cut into 6 pieces
3/4 cup (about 3 3/4 ounces) all-purpose flour
2 teaspoons of baking powder
1/2 teaspoon salt
1/4 cup (about 2 1/3 ounces) packed dark brown sugar
2 large egg yolks
2 teaspoons pure vanilla extract
1/3 cup whole milk
2 teaspoons coarse sea salt, such as (See Notes)

How to Make Caramel Pudding:
Step 1.
Making caramel: prepare a non-stick pan, heat the sugar until it is browned and becomes caramelized, turn off the heat.
Step 2.
Set aside, wait until the caramel is not hot, take 300 ml of milk, put it in the caramelized sugar, cook on low heat until the sugar dissolves. Strain
Step 3.
Beat the egg yolks, pour in the liquid milk, mix well. Then add the caramelized milk, agar agar, a pinch of salt, and vanilla. Cook over medium heat, add white chocolate, stir constantly until cooked, set aside.
Step 4.
Prepare a 22x22x7 tin, cover the bottom with plastic/non-stick baking paper.
Step 5.
Put the cake on the bottom of the pan, then pour the agar to caramelize. Wait until it hardens a bit. Then pour with chocolate pudding.
