Yes these are not your average peanut cookies which have a tendency to be a bit too hard, are bit too raw-peanuty and a bit too bland. No. These crinkles have a very scrumptious buttery (but not too buttery), sweet, roasted, peanut melt in your mouth kind of quality. And are a definite must for peanut butter fans!

Ingredients:
120 grams butter
½ teaspoon vanilla
½ teaspoon grated lemon rind
1/3 cup caster sugar
1/3 cup brown sugar lightly packed
1/3 cup peanut butter (smooth)
1 ¼ cup plain flour
1 teaspoon bicarbonate of soda & pinch of salt

Steps to Make Peanut Butter Cookies:
Steps 1
Preheat the oven to moderate, 180 degrees Celsius. Grate the lemon rind.
Steps 2.
Cream together the butter, vanilla, lemon rind, sugars and peanut butter using electric beaters.
Steps 3.
Then using a wooden spoon, mix in the sifted flour, bicarbonate of soda and salt until well combined.
Steps 4.
Roll teaspoonfuls of mixture into small balls and place on baking trays lined with baking paper.
Steps 5.
Press biscuits down lightly with a fork in a criss-cross fashion to give the crinkled effect. Bake for 10-15 minutes.
Steps 6.
Cool completely on oven trays.

Tip! If you re more of a I like to see Peanuts in my Peanut butter cookies type of person, then by all means use crunchy peanut butter instead of smooth peanut butter to give it a bit more crunch!
