Cold Udon Noodles with Spicy Crab Eggs and Scallops |
Udon is a popular Japanese noodle made from wheat and instantly recognisable for its thickness. Its versatility allows it to be used in both soups, stir-fried and cold/chilled applications.
The following recipe is a cold dish and requires soaking cooked udon noodles in ice water before combining with tasty scallops, crab eggs and shredded cucumber. Taking the Japanese approach of less is more, this recipe is very simple to follow yet incredibly tasty.
Ingredients:
150 grams Udon Noodles
3 tablespoon Crab Eggs
15 grams Scallops
3 tablespoon Thousand island Sauce
2 teaspoon Chili Sauce
1/4 Lebanese Cucumber (shredded)
Method:
Steps 1.
Cook the udon noodles in boiling water until done. Rinse in cold water before soaking the noodles in a tub of ice water.
Steps 2.
Combine thousand island sauce, crab eggs and chili sauce in a mixing bowl and chill in fridge.
Steps 3.
Melt butter in pan and fragrant scallops.

Dish up udon noodles, garnish with scallops and shredded cucumber.
