Capsicum, chives & garlic tart! This tart really brings out the sweet taste of capsicum! Not only is it vegetarian-friendly but it is really tasty! Which goes to show, I probably dont need to add bacon to everything to make it taste good. But I guess, whatever makes you happy!
I guess this tart does in some ways resemble a mini-pizza, although the pastry does differ a bit in texture. Perhaps cutting this tart into mini-slices will not only make it more easy to share, but more fun to eat!
Capsicum, chives & garlic tart
Ingredients:
1 sheet of ready-made puff pastry
4 tablespoon of tomato paste
2 cloves of garlic chopped finely
1 bunch of chives washed and roughly chopped,
½ capsicum sliced
1/3 cup Parmesan cheese
4 stuffed olives
Method:
Steps 1.
Preheat the oven to 220 degrees Celsius.
Steps 2.
Trace around a bowl of 10cm diameter to cut out 4 x circles out of the pastry.
Steps 3.
Place the circles onto baking trays lined with baking paper.
Steps 4.
Spread the tomato paste onto the pasty.
Steps 5.
Sprinkle the garlic and chives onto the tomato paste.
Steps 6.
Arrange the capsicum on top of the chives, place an olive in the centre and sprinkle with parmesan cheese.
Steps 7.
Bake for 20-25 minute or until the pastry is golden.
